Cooking for one

I’m learning how to manage my own kitchen!  LOL.

I will say it is so very tempting to just eat out, or to eat lots of easy processed foods.  This is at odds with my efforts to be a more healthy person, to lose weight, to actually (gasp) live past fifty.

So while I have some cans of soup in the pantry, I try and cook. Which is funny to watch, I’m sure, and it feels a bit wasteful.  I try and make a casserole that I can portion out and take to work for lunch, or freeze and make it last longer.

I'm about to dig inToday’s experiment was supposed to be mac and cheese, but I had no macaroni so I used rotini instead.  The sauce is milk and cheese with some flour, salt and pepper in it.  Basic ingredients should taste good, right?

So why do I sometimes miss the day-glo goodness of Kraft dinner? Ha.
